I did one of those for Christmas dinner last year! I marinated it in a recipe I found online for 24 hours, then I cooked it in the Sous Vide for 36 hours at 129 degrees. Seared it afterwards after letting it rest for a half hour. Oh my freaking God, I thought I was eating at a 5 start restaurant it was that good!. Hope it turns out well for you!
