OK. I only flipped through a couple pages of this mess. You said you had admin rights. Delete her account and pick up a second computer. Run a system restore back to factory settings. Or, do a low level format of the hard drive, reload your BIOS, and then reload everything. Of course, she's going to figure that out when you do it. Also, check the connection between your keyboard and the port that connects it to the computer. Any unusual adapters there? It could be a hardware keylogger. Any cute new toys in the area that could contain video cameras watching your computer screen? Are there any vans parked across the street for long periods of time? I hope you don't have any pet rabbits.
I think I'd leave my girlfriend over something like this lol so I'm no help to you. I'd suggest buying dvds I guess.

Good choice if you think she is a keeper. coming clean and trying to involve her is better. but... If you just have to have something on hand what I would suggest, and I think it was already mentioned, if there is no obvious external devices added back everything up and restore the machine. Run a debug script and reinstall the OS. Then set everything back up as close to normal as you can. this time set up an administrator account and password protect it all the way to the bios. Let her in occaisionally to look around but put your stuff on an external devise.

Install Malwarebytes Malware Remover, and Spybot Search & Destroy. They usually find keyloggers and spyware on your computer. Make a system restore point before you download/install those programs. Then run those programs, when you're done, you have the freedom to visit as many pron sites as you wish. After you are done, do a system restore to the point before you downloaded/installeld those programs. IM NOT 100% sure on the effectiveness of this, but at least you can find the programs with those programs. She's slowly taking away your man rights. Wage war bro. Wage war. If she's keeping tabs on your porn, shes also reading your e-mail. She knows everything about what you do online so be careful. You need to be proactive brother, instead of reactionary. From this point forward you will not allow her the privelege of intruding on your privacy. Test her fortitude, and yourself. Do things out of the ordinary, take her out to a sex shop and buy her things you want to see her in, forget your money and just tell her to buy it. you can always try encrypting or setup passwords to your Pron folders to prevent her from accessing them. you can do it within windows or use 3rd party software.this is something to consider when you get a new computer. Get two mac for her & yourself. she will love the mac so much, she would even bother snooping on yours. setup filevault for encryption and she will never be able to access it unless she has the passwords. My wife has given up on changing me, and she learned not to let me hold her purse. The first time she did I ended up embarrassing the hell out of her by pretending to be a queen when she came out of the dressing room. I remarked on her outfit with a real flamboyant flair, flipped my wrists and whatnot, just went the whole 9 yards. She quickly grabbed her purse, changed back into her clothes and we left the store. She never again asked me to carry her purse, in fact, bonus here, she doesn't even ask me to go to the mall anymore.
If you hit control+alt+del it brings up a tab, look at processes, it has to be there, also you can try start menu, run, type in "mscofig" then got to the start up menu, should show up there.
