I'm not an X's and O's kind of guy and really do want to learn. Considering our playbook only has one word description for plays and the sum total of the plays are on one sheet we can only assume that these are baby steps and that there is a long way to go

Extreme baby steps. The second playbook that the OP linked is EXTREMELY "dumbed down" obviously. This is about as basic as you can get. Looks "high schoolish." Hell, you could run a lot of that stuff at the pee wee and middle school level with the right talent. I have.
Again, never claimed is was a pro caliber book. If you know of where I can access the more complex playbooks, I would greatly appreciate it.
