I'm thinking of getting an iPod touch. Should I get 8GB or 32GB? I know it depends how much music/movies I have, but how much space do the apps take up? Should be less than songs right?

It’s tough to say how much space apps will take up, because there are so many apps and genres out there. iOS games are starting to become really large in file size. For example: Infinity Blade is 548MB; Angry Birds is just under 20MB; Final Fantasy III is 208MB; Gravbot is 16.2MB. The eBay app is about 10 MB, the GameFly app is about the same size, etc.
I would say that if you don’t do much gaming and only listen to a few songs (less than 250), 8GB is sufficient. If you want to load it up, go with the largest size you can afford. -

I'm getting refurbished 3rd gen anyway, so maybe 32GB sounds good. I remember having a refurbished Discman (remember those!!) from the late 90s that lasted a long time. Actually still have it buried in a drawer...Hmm I wonder if it still works?
