I was on the dissection team at my school last semester. We dissected corpses for the anatomy class.
IMO the liver looks a great deal like the liver you'd find at your grocer. I know that sounds gross, but really much of our insides look like the various kinds of raw meats we get from other animals. As gross as it may sound, I think that should be expected as we are quite similar to other species. As for the gallbladder and pancreas, in simple terms they are organs that secrete digestive proteins. Basically, our bodies digest fats, proteins and lipids at different points (mouth, stomach, intestines). Salivary glands, the gallbladder and pancreas are examples of organs that secrete digestive fluids that act on the various types of food at different points along our digestive tract.
