    I made a post on this topic a while back. I think it was after the draft. Here's the article that I found that gave me the topic on the post.

    This article was a "where are they now" article that was about Joe Schoen, former Dolphins national scout and current assistant director of college scouting. While the article is about him, it gives you and idea of what kind of schedule these scouts have. The Dolphins had some recent promotions within the scouting staff, with super scout Adam Engroff being promoted to national scout, which means instead of focusing on the western region, he now scouts the entire country. From what I've read, Schoen and Engroff will be the big two that are scouting the entire country.

    Based on this article, this is what these guys schedule likely looked like. Prior to coming to training camp, Schoen and Engroff along with Director of College Scouting Chris Grier and GM Jeff Ireland formed a list of players that they considered to be draftable players for 2014, and they have been watching tons of coaches film on those players and giving them preliminary grades. Since training camp has started, Schoen and Engroff have been focused on scouting the Dolphins players. They do this to get a feel for what the team currently has and what positions they will likely need to evaluate heavily when August rolls around. After the first week of training camp, they probably have a pretty good idea of what positions will likely be weaknesses for the team this season.

    My guess is, over the next couple of days, Schoen and Engroff will likely be meeting with Chris Grier and setting their schedule for when August starts on Thursday. While the article doesn't mention this in particular, part of this will probably also include setting the schedules for the regional scouts. When Thursday gets here, Schoen and Engroff will be on the road, visiting practices, and going to games when the season starts. I don't know who else starts up camp this week, but I know Mississippi State is opening up on Thursday. The first 6 practices are open to the fans, so I'm going to try and get down to Starkvegas to watch them practice on Saturday. It wouldn't surprise me if one of these two guys will be there getting a look at Mississippi State offensive guard Gabriel Jackson.

    Anthony Hunt was promoted to Director of Pro Personnel. That move was what created the opening for Engroff to become one of the two national scouts.

    From what I can gather, Hunt and Schoen were the Dolphins national scouts. They essentially promoted both, but only Engroff got the title of national scout. The word on Schoen is that he will continue to scout the country, so my guess is, Schoen has a fancier title but will essentially be doing the same things.
